Chicken with Green Olives and Preserved Lemon

On the weekend we celebrated Kerrie's birthday with a homecooked Moroccan meal. One of our dishes was chicken with green olives and preserved lemon.

We had to shop around a bit to find Moroccan preserved lemons and finally found some at Gourmet Warehouse. Although preserved lemon can be omitted from the recipe, it adds a very unique, slightly bitter-tart flavour to the dish that we loved.

Chicken with Olives and Preserved Lemon

12 chicken thighs, skin removed
2 Tbsp. lemon juice
6 cloves garlic, minced
Salt, pepper
1 Tbsp. olive oil
1 large onion, sliced
2 tsp. dried ground ginger
1/2 tsp. hot pepper flakes
2 tsp. ground cumin
1/4 tsp. cinnamon
1/2 tsp. saffron, crushed
1/2 cup chicken broth or water
1/2 cup green olives
1/2 preserved lemon, thinly sliced

Margaret's latest Vancouver Italian Cooking Class

Margaret is a friend who we met when she organized our cooking schools on our honeymoon.

She's organizing a cooking class which promises to be just as great as the last one. Check it out! We would go ordinarily but with a baby on the way, Barb can't drink so we probably won't be there. I am sure it will be wonderful and well worth the money.

It ain't fancy and the service isn't the quickest but the food is lovely at Del-Hi Darbar on Main (2120 Main Street at 5th, 604 877-7733).

DreamDinners - Home cooked dinners that you cook yourself but somebody else cleans and buys the ingredients

(via scoble) If you like cooking but don't like shopping for ingredients or don't have a kitchen and have money, then dreamdinners may be a good idea for you. For US $200 for 12 entrees (each entree feeds 4-6 adults), you pick what you want to cook, dreamdinners buys the ingredents, you cook at their kitchen and they clean up. Only available in the USA for now, but I bet this will come to Canada soon.
