Butter chicken is one of my favourite Indian dishes. Whenever we go out for Indian food, I order it. My friend Kamal cooks butter chicken at home and this is her recipe for a much lower fat version that tastes very similar to the traditional cream laden one.
1 chicken 1 small tin tomato paste 3 cups buttermilk 5 cloves garlic, crushed 2 Tbsp. fresh ginger, grated 1 green chili, crushed 1 1/2 tsp. salt 1 tsp. curry powder 6 whole cloves 3 pods black cardamon 4 cinnamon sticks 1/2 tsp. pepper 1 tsp. sugar
Cut chicken into serving size pieces. Remove skin. Combine all ingredients and marinate at least 1 hour or up to 8 hours. Place chicken and marinade in a large pot and bring to a boil over high heat.
This recipe for onion marmalade is one that I've had for years. I love the sweet-tart flavour of this condiment...the onion and garlic mellow out.
This is great served with cheeses, cold cuts or with a savoury pork roast or pork chops. For a quick and tasty appetizer, I like wrapping a spoonful of the marmalade with a little chunk of goat cheese or brie in phyllo and baking until golden.
1 lb. chopped red onion 1 Tbsp. butter 2 cloves garlic, minced Dash of salt 1/4 cup sugar 1/4 cup dry sherry 2 Tbsp. herb vinegar 2 Tbsp. honey Freshly ground pepper Dash of cayenne
Saute onions and garlic with the butter in a saucepan for 5 minutes. Add remaining ingredients, lower heat and simmer until the mixture has thickened, about 40 minutes. Taste for seasoning. Store in sterilized jar in refrigerator for up to 2 weeks or freeze in airtight container. Warm to room temperature before serving.
This recipe for lemon cheesecake combines one of my favourite flavours with one of my favourite desserts. It's great on its own, topped with fresh berries in season or with sparky lemon curd.
1 1/2 cups graham cracker crumbs 2 Tbsp. sugar 1/4 cup butter, melted 3 - 8 oz. (250 g) packages cream cheese 1 cup sugar 1 Tbsp. cornstarch 3 eggs 1 Tbsp. grated lemon rind 2/3 cup lemon juice Lemon curd
For crust: Combine graham cracker crumbs, 2 Tbsp. sugar and butter in a small bowl. Pat into bottom of 9" springform pan. Bake at 375 degrees for 8 minutes. Cool. For filling: Stir together sugar and cornstarch.
The Ridge Garden is my one and only neighbourhood Chinese restaurant. It's an easy 5 minute walk away. The closest other Chinese restaurants are much farther away on 4th or Broadway.
It will never win any awards but it's great to have a competent back to basics non pretentious restaurant serving down home style Chinese cuisine so close to home! Read my review for more details.
The Ridge Garden Restaurant is in the same strip mall as the Ridge Theatre in Kits and is a very near where I live. A five minute walk to be precise!
At first glance it appears to be the usual "Chinese Canadian Restaurant". Looking at the menu and the various stereotypical "Dinner for X" posted on the menus outside complete with Chop Suey and Chow Mein appears to confirm these impressions. For this reason, this restaurant initially did not appeal to us.
