Onion Marmalade

1 lb. chopped red onion
1 Tbsp. butter
2 cloves garlic, minced
Dash of salt
1/4 cup sugar
1/4 cup dry sherry
2 Tbsp. herb vinegar
2 Tbsp. honey
Freshly ground pepper
Dash of cayenne

Saute onions and garlic with the butter in a saucepan for 5 minutes.
Add remaining ingredients, lower heat and simmer until the mixture has thickened, about 40 minutes.
Taste for seasoning.
Store in sterilized jar in refrigerator for up to 2 weeks or freeze in airtight container.
Warm to room temperature before serving.
