During the holidays, we received a large box of Turtles chocolates (for those unfamiliar with them, they are milk chocolate covered caramel pecan clusters). We gave some away, but there is no way we can eat the rest of them.
For our wedding, we registered for some silicon--bakeware that is!! Silicon bakeware has been around for the last few years and many bakers swear by its nonstick qualities and durability.
I tried out our new mini muffin cups this evening to make mini turtle brownies. I just put the silicon muffin mold onto a baking sheet and filled the cups with batter--no need to grease or line the molds. When the brownies were baked, I let them cool in the muffin molds and they popped out!
After spending the holidays in Ontario (brrrr!!!), I'm ready to warm up with lots of hearty soups and stews. One of my favourite quick breads to serve with soup is this cheesy scone. I often vary the recipe by using different cheeses and herbs.
2 cups flour 4 tsp. baking powder 1/2 tsp. salt 1 tsp. sugar 1/4 cup butter 1/2 cup shredded cheddar cheese 1/2 cup shredded swiss cheese 1/4 cup grated parmesan cheese 2 eggs, beaten 1/2 cup milk
Mix together flour, baking powder, salt and sugar. Cut in butter until butter is in small pea-sized pieces. Stir in cheeses. Set aside 3 Tbsp. beaten egg. Add milk to remaining egg. Add egg-milk mixture all at once to dry ingredients. Stir only until moistened.
