Three Cheese Scones

2 cups flour
4 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar
1/4 cup butter
1/2 cup shredded cheddar cheese
1/2 cup shredded swiss cheese
1/4 cup grated parmesan cheese
2 eggs, beaten
1/2 cup milk

Mix together flour, baking powder, salt and sugar.
Cut in butter until butter is in small pea-sized pieces. Stir in cheeses. Set aside 3 Tbsp. beaten egg. Add milk to remaining egg.
Add egg-milk mixture all at once to dry ingredients. Stir only until moistened.
Knead 10 times. Pat into a circle 1/2" thick. Cut into 6 or 8 wedges and place on an ungreased baking sheet. Brush with reserved egg.
Bake at 425 degrees F for 12 to 15 minutes.

Makes 6 large or 8 medium scones

Variation:
If I don't have all three types of cheese, I'll just use more of one or another.
This recipe is great with different herbs and spices such as coarsely cracked black pepper, rosemary, sage, oregano or dill.
