My dad has a few key commandments for making soup: skim off all the fat from stock (he's religious about that!), and good broth is the basis for good soups. I've mastered making rich, flavourful and clear chicken broth from Dad's pointers. But more recently I've been making vegetable broth so that I can adapt more soup recipes for our vegetarian friends.
Cut onions into wedges. Scrub and cut carrots and rutabaga into 1" pieces. Cut celery into 1" pieces. In a roasting pan, toss together the onions, carrots, rutabaga and celery with the oil. Roast at 475 degrees F for 45 minutes, stirring every 15 minutes, until vegetables begin to caramelize.
We went down to the UBC Apple Festival and bought 4 bags of apples (each $5.00) for cooking and eating.
Some of the obscure apples are gone but there are still lots of great apples left. If you like apples, I would urge you to visit tomorrow and buy some apples or apple trees. There are also apple treats and apple tasting (so you can figure what to buy!) for $2.
