Tree cooks Carrot Cake from Bon Appetit

One our closest friends, Teresa from Toronto, has tried a carrot cake from Bon Appetit and loved it! Check out her story.

Carrot Pineapple Muffins

At work, our team members take turns bring treats for our staff meetings. Last week Bonnie brought these tasty carrot pineapple muffins that she baked. The dates in the muffins add a nice sweet dimension.

Carrot Pineapple Muffins

3 cups whole wheat flour
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
4 eggs
3/4 cup sugar
2/3 cup oil
1 - 10 oz. tin crushed pineapple
2 1/2 cups carrots, shredded
1 cup chopped dates

Combine first 6 ingredients in a large mixing bowl.
In a medium bowl, beat eggs 2 minutes or until they start to thicken. Add sugar and beat another 2 minutes. Beat in oil.
Add egg mixture to dry ingredients and fold gently.
Fold in pineapple, carrots and dates.

March is Nutrition Month

Mini-Review: The Clubhouse Japanese Restaurant

Last Saturday after Lindy Hopping at the Legion, we arrived at the Clubhouse at about 12:20a.m. Sunday morning. Luckily they were open and the kitchen still cooks almost until the very end when they close at 1:30a.m.

The Clubhouse is a fun restaurant that's definitely not like a typical Japanese restaurant. It's like a diner with booths. A great place to bring people after clubbing or dancing.

After swing dancing at the Legion until midnight on Fridays and/or Saturdays sometimes Barb and I feel peckish. Sometime we go for late night Chinese food and sometimes we go for late night Japanese food.

Our current favourite Japanese late night restaurant is The Clubhouse Japanese Restaurant on 2nd. It's very cheap, cheerful and serves up good food! Check out our review!

Sunrise Tofu

Sunrise Tofu is another local tofu company based in Vancouver. They've been in operation since the 1940's and they've grown to export to as far away as Australia!

Sunrise carries an amazing range of tofu items including various styles of tofu (silken to extra firm) and tofu items (soy beverage, tofu dessert). One of their newest items is tofu baked in various sauces, ready to eat.

Sunrise uses organic soybeans and they pasteurize their products for longer shelf life.

Kimchi Soup

On the subject of tofu, here's another tasty use for tofu...kimchi soup. Kimchi is basically a Korean style fresh pickle. Kimchi can be made from many different vegetables, but most typically it's made from chinese cabbage (sui choy) or napa cabbage, salt and Korean chili flakes. It's spicy, pungent and appetizing!!

You can make this soup vegetarian by omitting the meat and substituting vegetable broth for chicken broth. Or you can use whatever meat you like including chicken or seafood like clams or prawns.

Kimchi Soup

1 small onion, cut into thin wedges
3 cloves garlic, minced
1 Tbsp. oil
3 cups chicken broth
1/4 lb. beef or pork, thinly sliced
1/2 tsp. soy sauce
1/2 tsp. sesame oil
250 g kimchi
1 - 454 g (1 lb.) package medium firm tofu
1 green onion, cut into 1" lengths
Freshly ground pepper

Heat a medium saucepan over medium high heat.
Saute onions in oil until they begin to brown. Add garlic and saute another 30 seconds.
Add broth. Bring to a boil, then turn down heat and simmer for 15 minutes.

Two Cool Mapo Tofu sites

Tonight I found two cool Mapo tofu sites: One is a web design project from a woman at RIT and it looks good! The only problem is that her recipe calls for ground beef! As I said before, ground pork is MUCH better and if you grind it at home, it's even better.

The other recipe is from a Sichuan travel agency. This is interesting because Sichuan is the home of this recipe.
