Hands-On Mozzarella

(Via mirabilis) - Hands-On Mozzarella is an excellent NYC Eats blog post about a cheese making class in New York complete with a recipe. I love mozzarella (especially the real Italian buffalo kind!). Anybody know where we can get water buffalo milk for home made mozzarella?

Slightly off topic, but a good substitution for boccoccino, the fresh mozzarella is indian panner, which is slightly cheaper, the texture and taste (that is the fresh bland taste that absorbs flavours like basil well) are identical. In fact both indian and italian fresh mozzarellas are made from water buffalos milk (cows milk over here in canada).
