Not all restaurants in Richmond are Asian. The Greek Restaurant, Felicos at 8140 Leslie Road in Richmond (telephone 276 8282), serves fantastic lamb pie for $8.95. Check it out ! Lamb chunks wrapped in phyllo pastry. I''ve never eaten anything else there so I can't review it, but you can't go wrong with the lamb pie.
Our visit yesterday to Cloverdale Farms is the inspiration for this recipe. It's hard not to think "CORN" when you're surrounded by walls of it for over an hour and a half...corn on the cob, corn chowder, corn bread, corn relish...!
When we rushed home to make this corn chowder last night, I found that it really didn't need much seasoning other than a bit of salt and pepper. The corn was so sweet and flavourful!
5 strips bacon, diced 1 medium onion, diced 2 ribs celery, diced 1 red pepper, diced 2 large yukon gold potatoes, diced Chicken broth or water 6 ears fresh corn or 3 cups frozen corn kernels Salt Pepper
In a large saucepan, cook bacon until it starts to brown. Add onion, celery and red pepper. Saute until veggies start to turn translucent and soften. Add potatoes. Add broth or water until vegetables are covered by about 1". Bring to a boil, then turn down and simmer until potatoes are soft, about 15 minutes.
This sauce works well for chicken and fish. For fish, however, marinate for only 1/2 hour before grilling.
Mojo Sauce: 1 cup cilantro, packed 5 cloves garlic 1-2 serrano chilis, seeded 1/2 cup green onion, chopped 1/4 cup lime juice 1/4 cup olive oil 3/4 tsp. salt 1/4 tsp. pepper
2 lb. pork tenderloin steaks or chops 2 tsp. Latin spice mix
For Mojo sauce: Place cilantro, garlic and chilis in food processor. Pulse until coarsely chopped.
2 Tbsp. cumin seeds 1 Tbsp. black peppercorns 2 tsp. coriander seeds 2 tsp. sugar 3/4 tsp. salt
In a dry skillet, toast cumin, peppercorns and coriander over medium heat until fragrant, about 7 minutes. Cool. Grind to a fine powder in a coffee grinder. Store in an air tight container for up to 2 months.
Makes 1/4 cup
This spice mixture is great sprinkled on meat as a marinade base, on roasted potatoes, steamed vegetables.
As summer is beginning to wind down (at least the weather feels that way!), a lot of people are thinking of back to school lunch box ideas. This is a great muffin recipe that kids of all ages will love. Over ripe bananas are the most flavourful and the rolled oats add substance to this muffin.
I like to sprinkle chopped walnuts on the tops just before popping them in the oven.
One of my favourite "guilty secret" pleasures from Germany was eating Schupfnudeln. Schupfnudeln, at least the Swabish variant that I experienced in the Bodensee, were noodles made from potatoes similar to gnocchi (the Swabians are heavily into noodles like Spaetzle) with sauerkraut, and bits of fatty pork. It was available at every Fest and it was usually cooked in a large wok type device.
It sounds unappetizing, but it really hit the spot for a cheap, warm meal especially on those grey Bodensee days.
