Panzanella (Italian bread salad)

Panzanella is an Italian style bread salad that traditionally uses stale bread, tomatoes and other seasonal vegetables. Since we had some gorgeous heritage tomatoes, I decided to make this to accompany our steaks. This is my version of panzanella.

It's important to use a bread that has little salt, so it can go stale rather than mold. The bread should also have a lot of structure so the bread cubes don't fall apart when they soak up the delicious dressing. My favourite Tuscan style bread is from Pane e Formaggio. It goes without saying that the tomatoes should be as ripe and fresh as they can!
