When serving as vegetarian
When serving as vegetarian dish, I find Yves soy-based groundround to be excellent substitute for beef. In addition to other seasonings, I add a couple of tsps of corn starch to allow better cohesion when forming the (soy?)balls. I've fooled a many dinner guests in spaghetti meat sauces and in lasagna.
