Ginger Tea

Fresh ginger
Brown sugar or honey

Use about 1 inch of fresh ginger for every 2 cups of water.
Finely grate ginger using a rasp, ginger grater or box grater.
Place ginger in saucepan with water and bring to a boil.
Turn heat to low and simmer for 20 minutes.
Sweeten to taste with brown sugar or honey.
If the tea is too spicy, add more water.
Strain and serve hot or let cool and serve over ice.
