Bran Muffins

1 cup all purpose flour
1 cup whole wheat flour
1 1/2 cups wheat bran
1/2 cup brown sugar
3/4 cup raisins or other dried fruit
1 1/2 tsp. baking soda
1/2 tsp. salt
1 egg
3 Tbsp. vegetable oil
1/3 cup molasses
1 tsp. vanilla
2 cups buttermilk

In a large bowl, stir together dry ingredients.
In a medium bowl, whisk together wet ingredients.
Add wet ingredients to dry and stir until mixture is just moistened.
Spoon into greased or paperlined muffin tins until about 2/3 to 3/4 full.
Bake at 350 degrees for 15 to 20 minutes.

Makes 1 1/2 dozen large muffins or 2 dozen medium muffins
