Kimchi Soup

1 small onion, cut into thin wedges
3 cloves garlic, minced
1 Tbsp. oil
3 cups chicken broth
1/4 lb. beef or pork, thinly sliced
1/2 tsp. soy sauce
1/2 tsp. sesame oil
250 g kimchi
1 - 454 g (1 lb.) package medium firm tofu
1 green onion, cut into 1" lengths
Freshly ground pepper

Heat a medium saucepan over medium high heat.
Saute onions in oil until they begin to brown. Add garlic and saute another 30 seconds.
Add broth. Bring to a boil, then turn down heat and simmer for 15 minutes.
Meanwhile, marinate beef or pork with soy sauce and sesame oil
Drain and cut tofu into 1/2" cubes.
Add kimchi to broth. Simmer for 5 minutes.
Add beef or pork, tofu and green onion to broth. Simmer gently for 5 minutes. To keep the tofu intact, stir minimally.
Season with freshly ground black pepper.
