Apple Betty Squares

Before going swing dancing at St. James last night, some of our dance friends came over for dessert. One of the desserts I made was apple betty squares

The recipe is an adaptation of a classic apple betty: instead of baking the apples and breadcrumb topping directly in a baking dish, the mixture is baked on a shortbread crust (similar to the crust used in the fabulous pecan pie bars recipe).

The squares were a hit! I used newton pippin and pink lady apples that we bought at the UBC Apple Festival. Another tart, firm apple would be suitable. I added 1/2 tsp. cinnamon and mixed the flour and sugar in the apple layer right in with the apples. I also used only 1/2 the butter for the crumb topping.
