Pierre Franey's Arroz Con Pollo

After having paella at Sylvia Molnar's cooking cooking class last week, I had a craving for Arroz con Pollo. I have been cooking the late great Pierre Franey's Arroz Con Pollo recipe from one of my first cookbooks, More 60-Minute Gourmet, for more than 15 years!
