Country Style Potato Salad

On Thursday night we celebrated the Summer Solstice by packing a picnic to enjoy while swing dancing at the Kitsilano Showboat. Lisa and CJ brought roast chickens, bagels and cream cheese, Roland brought some great Greek dips from Parthenon, and I made this potato salad.
I wasn't planning on putting this recipe on, since it varies a lot whenever I make it. One thing I always do, though, is season the potatoes with a vinaigrette before adding mayo or salad dressing. I also love eggs in my spud salad.

No matter how you make your salad, make sure it stays cold whether you serve it indoors or out!
