Hey! Don't play with your lima beans!

When we were in Toronto, we visited some great Greek grocery stores on the Danforth. I was intrigued by a variety of huge white lima beans. So, I brought some home (not thinking I could get them here!) and soaked and cooked them.

These beans are fabulous...plump, meaty and absolutely huge! Inspired by simple, hearty flavours, I threw the beans together with other ingredients that give this simple tasty lima beans dish a lot of depth. This would be great as part of an antipasto selection or as a simple meal with bread and a green salad. You might want to make this ahead of time to let the flavours blend even more.

If you want to make this vegetarian, just omit the pancetta and add some more herbs and garlic.
