What to do when you wander in your garden and discover a zucchini the size of a baseball bat?
You can have a zucchini bake-a-thon (muffins, breads, cakes...) or you can freeze your zucchini to bake goodies later:
Grate zucchini and package in freezer bags in premeasured portions for recipes you plan to use. Freeze for up to 12 months.
When you plan to bake, remove a package of zucchini, thaw overnight in the fridge or in the microwave and proceed with your recipe (the zucchini might seem a bit soggy, but the water content should be close to what the recipe calls for)
