Basic Granola

3 cups rolled oats or old-fashioned oats
1 cup whole wheat flour
1 cup whole almonds, chopped
1/3 cup raw, unsalted pumpkin seeds
1/ 3 cup walnuts (or other nuts), chopped
2 Tbsp. oil
1/2 cup water
1/4 cup brown sugar
2 Tbsp. honey
2 tsp. vanilla
1 1/2 cups dried fruit

In a large mixing bowl, combine oats, flour, seeds and nuts.
In a medium bowl, combine oil, water, brown sugar, honey and vanilla. Stir until sugar is dissolved.
Pour liquid ingredients into dry ingredients and mix well.
If you like chunky granola, squeeze together mixture into small clusters.
Spread mixture onto a lightly greased or lined baking sheet.
Bake at 300 degrees F for 45 to 60 minutes, stirring occasionally. For chunky granola, you may need to bake it longer to ensure that larger clusters are cooked through.
Cool completely and combine with dried fruit before serving.
Store in an airtight container for up to 3 weeks.

Makes about 6 cups
