Sponge Cake

1 cup cake flour, sifted
1/2 tsp. salt
1/2 tsp. baking powder (optional)
6 eggs, separated
1 cup sugar
1/2 tsp. vanilla or 2 tsp. finely grated lemon rind
1/2 tsp. cream of tartar

Sift together flour, salt and baking powder.
Beat egg yolks until thick and pale in colour. Gradually beat in sugar and vanilla or lemon rind.
Fold in dry ingredients.
Beat egg whites with cream of tartar until stiff but not dry.
Fold into batter.
Bake in an ungreased 10" tube pan at 325 degrees F for 45 minutes or until top of cake springs back when lightly touched or if toothpick inserted in centre of cake comes out clean.
