Jian & Walter's Wedding Cake

For Jian & Walter's wedding, I wanted to design a cake that would reflect both Walter's German roots and Jian's Chinese roots. I decided to make a cake with 2 flavours: chocolate cake layered with chocolate ganache and almond cake layered with apricot buttercream.

Jian wanted the cake to be decorated simply, so I frosted it with seven minute frosting and medium coconut, and garnished it with fresh fruit and herbs. I added a Chinese flare by topping the cake and the table with double happiness symbols.

The recipes for the cake layers and the buttercream are from my trusted (and well used) copy of The Cake Bible by Rose Levy Beranbaum.
