When one mentions cooking schools in Vancouver, one cannot forget to talk about Dubrulle, Canada's largets culinary training institute. They offer comprehensive culinary training courses including professional chef's training, pastry arts and training around the whole restaurant and hospitality business.
For the less serious cook, Dubrulle also offers classes for the serious amateur cook. These classes are great for learning specific skills (like how to use knives properly), for learning how to cook certain types of food (like breadmaking) and for learning to use different ingredients. The evening and weekend line up of these classes sounds great. I'm intrigued by the upcoming class on Indian breads and another about foie gras. I think Roland, who is an avid cleaver wielder, might benefit from the "how to use a chef's knife" class!
