Waffle Lust

I love waffles. I've been wanting a waffle iron for ages and finally got one for Christmas from Kerrie and Toni (thank you!!). So since then, I've been experimenting with different recipes.

The simplest waffle recipe I've tried is made like a quick-bread, similar to a basic pancake batter. The result is flavourful and somewhat dense. I've also tried a recipe where the eggs are separated: the yolks are combined with the liquid ingredients, then the whites are beaten and folded into the batter. These waffles are lighter and airy. I like both methods and I've added goodies such as berries and nuts. Needless to say, I've stocked up my freezer with waffles...leggo my eggo!!

Next type of waffle I'll try making is a Belgian style waffle. This involves making a batter with a yeast base, so the flavour should be really nice. I'll post recipes once I come up with some really good ones!
