Warm Goat Cheese Spread

140 g goat cheese (chevre)
Finely grated rind of 1/2 lemon
1/4 cup black or kalamata olives, pitted and chopped
1/4 tsp. freshly cracked black pepper, optional
Juice of 1/2 lemon
Olive oil
1 tsp. chopped parsley

Crumble goat cheese into a small oven proof dish.
Sprinkle with lemon rind, olives and black pepper.
Bake at 325 degrees F for 12 to 15 minutes or until warm.
Remove from oven and drizzle with lemon juice and olive oil to taste.
Sprinkle with parsley.
Serve warm with crackers or bread.
