Sweet Potato Coconut Soup

2 tsp. oil
1 medium onion, chopped
3 cloves garlic, chopped
1 Tbsp. minced fresh ginger
3 cups sweet potato (1 large), chopped
1 medium potato, chopped
3 cups chicken or vegetable broth
1/2 cup unsweetened coconut milk
Salt and pepper to taste

In a large saucepan, heat oil over medium-high heat.
Add onion, garlic and ginger and saute for about 5 minutes, until fragrant but do not brown.
Add sweet potato, potato and broth. Bring to a boil, then turn down to low and simmer for 15 to 20 minutes or until potatoes are soft.
Puree soup in food processor or blender.
Return soup to saucepan and add coconut milk. Warm gently without boiling. Season with salt and pepper.
