1/2 to 3/4 pound boneless beef shank cut into thin slices
one 4 inch piece of ginger, peeled and cut into thin slices (depending on how gingery you want the soup, use more or less ginger)
enough water to almost fill a Slow Cooker with the beef and ginger inside

Put beef and ginger into a Slow Cooker and add just barely enough water to cover and turn to high. Heat enough water to fill the Slow Cooker in a kettle and when water boils add enough water to the Slow Cooker so that it is almost full.
Cover and cook on the Slow Cooker's highest setting for 3 1/2 to 4 1/2 hours. Take out the ginger and beef (you can eat the beef with the soup or give it to your dog!) and strain off the fat. Season with a bit of salt to taste and serve. Makes enough soup for six to eight hungry people as part of a Chinese meal.
