This sauce works well for chicken and fish. For fish, however, marinate for only 1/2 hour before grilling.
Mojo Sauce:
1 cup cilantro, packed
5 cloves garlic
1-2 serrano chilis, seeded
1/2 cup green onion, chopped
1/4 cup lime juice
1/4 cup olive oil
3/4 tsp. salt
1/4 tsp. pepper
2 lb. pork tenderloin steaks or chops
2 tsp. Latin spice mix
For Mojo sauce:
Place cilantro, garlic and chilis in food processor. Pulse until coarsely chopped.
Add remaining ingredients and process until well blended but not completely smooth. Makes 1 cup sauce.
Sprinkle both sides of pork with Latin spice mix.
Pour 1/2 of Mojo sauce over pork and coat well. Cover and refrigerate at least 6 hours or overnight.
Barbeque over medium-high heat until done, about 8 minutes each side.
Serve with remaining Mojo sauce
