2 cups coconut milk
1/4 cup syrup (recipe follows)
Combine coconut milk with syrup and chill at least 1 hour.
Process chilled mixture in ice cream maker as per manufacturer's instructions.
1 cup sugar
1 cup water
Prepare an ice bath.
Combine water and sugar in a saucepan and boil over medium heat. Cook until sugar is dissolved, about 10 minutes.
Set over ice bath until syrup is well chilled.
