2 1/2 cups flour
1/2 cup Dutch processed cocoa
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup butter
1 3/4 cup sugar
2 tsp. vanilla
1/2 cup milk
2 cups (about 3/4 lb.) zucchini, grated
1 cup walnuts, toasted
1 cup dried sour cherries, soaked in brandy and drained (optional)
Sift together flour, cocoa, baking powder, baking soda, salt and cinnamon.
In a large bowl, cream together butter and sugar until fluffy. Beat in eggs and vanilla.
Alternately beat in flour mixture with milk, starting and ending with flour. Fold in zucchini, walnuts and cherries.
Pour batter into a greased and floured 10" tube pan or 2 - 4" by 8" loaf tins.
Bake at 350 degrees F for 50 to 60 minutes until toothpick inserted into centre comes out clean.
Cool on a wire rack for 10 minutes before removing from pan. Cool completely on wire rack before serving.
Makes 1 - 10" cake or 2 loaves
